In that why the Throne Watcher set is good with good physical defense and good magic defense. But not many of them have good physical defesen. If you want elemental defesen the Black Withc set, Hexer set, Chaos set and Black set seem to be really good choices, and mix and combine to get the best out of it. To get the Moon Butterfly armor, gloves and skirt, you need to either be in NG++ or burn two bonfire ascetics at the bonfire in Majula.
But this would probably be enough information to find a good set. I haven't done this for poison, bleed, curse or petryfing. Top 10 fire defense is a lot of the same set: These are the top ten set for Magic (all fully upgraded). It's also the set with highest defense per weigh unit. But doesn't have a head piece, so a good helmet can increase defense a lot. Also the Llewellyn set is really good 13 weight with 344 f. You got the Throne Watcher set at 27,5 weight, and 512 physical defense, King's set 27,1 and 485 f, Elite Knight set does 475 physical defesne, at 26,8, and of course the Alva set with 419 f. If you can use any medium armor from the game then yiou have the Drakeblood set at 29,6 with 593 physical defense fully upgrade (the same defense at the Faraam set at 30).
